Preparation
Bring a pot of water to a boil. Mix together lemon juice and garlic. Whisk in chicken stock and oil. Add scallions and salt and pepper to taste. Add zucchini to water. Let water return to a boil and simmer for 1 to 2 minutes, uncovered.
Drain and toss in the dressing. Serve on a bed of lettuce leaves.
