Peri Peri Grilled Vegetables

Ingredients
2 zucchini, sliced into coins
2 yellow squash, cut into coins
1 large red onion, roughly chopped
2 bell peppers, cored and cut into 2-inch pieces
1 pint Bowl & Basket cherry tomatoes
2 tbs Bowl & Basket Specialty Peri Peri Spice
1 tbs Bowl & Basket Olive oil
Directions
- Preheat the grill to 400 degrees.
- While grill is preheating, toss vegetables with olive oil and peri peri spice until well coated.
- Place in grill basket (or alternatively, make a foil packet) and grill for 15 minutes, stirring every few minutes to ensure all vegetables get grilled evenly.
- Remove from grill and serve!
