Green Goddess Pasta Salad

Ingredients
1/2 cup Greek Yogurt
1 tbs Extra Virgin Olive Oil
1/2 tbs Capers
1/4 cup Basil, leaves only
2 tbs Dill, rough chopped
2 Scallions, chopped
2 Garlic Cloves, rough chopped
2 tbs Lemon Juice
1 tsp Kosher Salt
1/4 tsp White Pepper
6 oz GoodWheat Rotini Pasta, dry
1 cup Cherry Tomatoes, halved
1 cup Artichokes Hearts, quartered, canned, drained, chopped
1 cup Red Pepper, roasted, jarred, chopped
2 cups Arugula, fresh
1/4 cup Basil, chopped
1 cup Mozzarella, fresh, mini balls
Directions
- Cook rotini according to packaging instructions until al dente.
- Drain and rinse under cold water. Set aside.
- In a blender, combine all ingredients for the green goddess dressing and blend until combined.
- Remove from the blender and set aside in a large bowl.
- Add the cooked rotini pasta, cherry tomatoes, artichokes, roasted red peppers, arugula, basil, and mozzarella balls into the large bowl and stir to combine.
