Ingredients
1 bag Success® White Rice
4 cups chicken broth
2 tbsp butter
2 cloves garlic, minced
1 cup onion, chopped
1 cup mushrooms, sliced
2 chicken breasts, cooked and cut into small cubes
¼ cup dry white wine
½ cup parmesan cheese, grated
½ tsp salt
¼ tsp black pepper
Fresh parsley, chopped (for garnish)
Directions

Step 1: Prepare rice according to package directions, substituting chicken broth for water. Drain, reserving 1/2 cup of chicken broth.

Step 2: Melt butter in a large skillet over medium heat. Add garlic and cook for 1 minute or until fragrant. Add onions and mushrooms, sauté for 5 minutes.

Step 3: Add chicken and wine. Cook for 5 minutes, occasionally stirring.

Step 4: Add rice, reserved 1/2 cup chicken broth, parmesan cheese, salt, and pepper. Stir until creamy.

Step 5: Top with parsley and serve.
