Greek Meatballs

Ingredients
1 lb Certified Angus ground beef
½ cup finely chopped onion
3 garlic cloves, finely minced
1 egg, beaten
¼ cup seasoned breadcrumbs
¼ cup finely crumbled feta cheese
2 tsp ground oregano
¾ tsp salt
¼ tsp ground black pepper
2 tbsp fresh lemon juice
1 package Toufayan pita, cut into quarters (sku 7312400106)
2 cups cooked white rice
1 cup cherry tomatoes, halved
4-6 mini seedless cucumbers, sliced
Bowl & Basket Tzatziki sauce, for serving (optional)

Directions
- Combine the first 10 ingredients (beef through lemon juice) in a large bowl and gently mix together to make the meatball mixture. Portion out meatballs using a large cookie scoop or by hand.
- Heat the air fryer to 375 degrees. Cook several meatballs in the air fryer (cook in batches to avoid overcrowding) for 10-12 minutes, flipping once halfway through to brown evenly. Remove from the air fryer and repeat until all meatballs are cooked.
- Serve meatballs over rice with tomatoes, cucumbers, tzatziki sauce and fresh lemon wedges, if desired.
To cook in the oven: preheat the oven to 400 and line a baking sheet with aluminum foil. Evenly space the meatballs out on the baking sheet and cook in the oven for 12-15 minutes or until fully cooked.
