Ingredients
1 4–5 lbs. boneless pork shoulder, cut into large chunks
1 tbsp minced garlic
¾ tbsp Bowl & Basket salt
1 ½ tsp bowl & Basket chili powder
¾ tsp Bowl & Basket black pepper
1 tsp Bowl & Basket dried oregano
3 tbsp lime juice
1/2 cup orange juice
1 ½ cups chicken broth
1 14 oz can fire roasted diced tomatoes
Directions
  1. Add all ingredients to the pressure cooker and stir to combine. Place lid on pressure cooker and ensure the vent is set to SEALING.
  2. Cook on MANUAL for 35 minutes and let pressure release naturally for 15 minutes before carefully releasing the rest of the pressure manually.
  3. Use two forks to shred the meat.
  4. If desired, place the meat on a foil-lined baking sheet and place under the broiler for 5-10 minutes to crisp edges.
  5. Serve with rice, beans and fried plantains, if desired.
