Roasted Sweet Potatoes

Ingredients
2-3 sweet potatoes (2 pounds) peeled and cut into ¼" rounds
2 tablespoons Light olive oil
1 teaspoon kosher salt
1 tablespoon Wholesome Pantry Organic Poultry Herbs, chopped
2 tablespoons Mild Harissa Spicy Moroccan Red Pepper Sauce
2 tablespoons Bowl & Basket Clover Honey
¼ Cup Shelled Bowl & Basket Specialty Shelled Pistachios, roughly chopped
Directions
- Preheat oven to 375°F. Add sliced sweet potatoes to a large mixing bowl and toss with olive oil and season with salt and poultry herbs.
- Arrange sweet potato slices in an even layer on a sheet pan and roast in oven for about 20 minutes. Flip sweet potatoes after 10 minutes and continue to roast until fork tender and well browned.
- Combine harissa and honey in a large mixing bowl and whisk until thoroughly combined. Toss potatoes in harissa honey to coat.
- Place glazed sweet potatoes on a serving platter and garnish with chopped pistachios.
