2 lbs Cooked Whole Brisket
1 cup BBQ Sauce
1 bag Shredded Cheddar Cheese
3/4 cup Mayo
1 jar Drained and Chopped Pimientos
1/4 grated Yellow Onion with Juices
Salt
Sliced Jalapeños
Pepper
6 Arnold Potato Sandwich Buns
Directions

1. Preheat oven to 300 degrees.

 

2. Using 2 lbs cooked whole brisket, cut into cubes and place in a large aluminum pan. Cover with 1 cup of your favorite BBQ sauce and set aside ½ cup for later.

 

3. Cook brisket uncovered for 1 ½ hours, stirring occasionally. Turn oven broiler on high for 5 minutes and finish until brisket is caramelized and crispy on the outside.

 

4. Remove from heat and stir in additional sauce.

 

5. For pimento cheese, mix 1 bag shredded cheddar cheese, ¾ cup mayo, 1 jar drained and chopped pimentos, ¼ grated yellow onion with juices, and season with salt and pepper.

 

6. On 6 ABO Potato Sandwich Buns, divide pimento cheese evenly among buns and top with burnt ends. Add sliced jalapeños and then top with bun. Enjoy all year, all the time!
