Ingredients
1 pack King's Hawaiian Ube Coconut Rolls
1 pint Coconut lime ice cream (homemade, or favorite store-bought flavor)
3 tbsp Butter (softened)
3 tsp Powdered Sugar
3 tbsp Chocolate or fruit topping (optional)
2 cups Heavy cream
2 Limes (zested)
2 cups Real coconut syrup
Directions
  1. First, make the Coconut Lime Ice Cream. Start by whipping heavy cream to stiff peaks. Gently stir in lime zest and coconut syrup then freeze for a least 6 hours (preferably overnight).
  2. Next, prepare the sliders by cutting the King's Hawaiian Ube Coconut Rolls in half horizontally.
  3. Butter the insides and place on hot griddle or pan until golden.
  4. Place griddled rolls in freezer for at least 1 hour.
  5. Once chilled, remove rolls from freezer and remove the top layer.
  6. Place a scoop of coconut lime ice cream (or ice cream of your choice) on each bottom roll and put top of rolls back on. Return to freezer until ready to serve.
  7. Once ready to serve, cut into individual sliders and sprinkle with powdered sugar. Top with chocolate or additional fruit toppings (optional).
