Pressure Cooker Pork Carnitas

Ingredients
1 4–5 lbs. boneless pork shoulder, cut into large chunks
1 tbsp minced garlic
¾ tbsp Bowl & Basket salt
1 ½ tsp bowl & Basket chili powder
¾ tsp Bowl & Basket black pepper
1 tsp Bowl & Basket dried oregano
3 tbsp lime juice
1/2 cup orange juice
1 ½ cups chicken broth
1 14 oz can fire roasted diced tomatoes
Directions
- Add all ingredients to the pressure cooker and stir to combine. Place lid on pressure cooker and ensure the vent is set to SEALING.
- Cook on MANUAL for 35 minutes and let pressure release naturally for 15 minutes before carefully releasing the rest of the pressure manually.
- Use two forks to shred the meat.
- If desired, place the meat on a foil-lined baking sheet and place under the broiler for 5-10 minutes to crisp edges.
- Serve with rice, beans and fried plantains, if desired.
