Purple Cloud French Toast

Ingredients
1 pack King's Hawaiian Ube Coconut Rolls
4 Eggs
1 cup Milk
1 tsp Vanilla Extract
1/4 cup Real Coconut Syrup
2 tbsp Butter (for pan)
Directions
- First, make the toasted coconut butter, starting with preheating the oven to 350°F.
- In a small oven-safe pan, add shredded coconut and bake for 5-10 minutes, stirring every couple minutes to ensure even browning.
- Remove and let cool completely. Once cooled, fold toasted coconut into softened butter.
- Moving on to the french toast, remove King's Hawaiian Ube Coconut Rolls from the tray and break apart into individual rolls.
- In a bowl, combine eggs, milk, vanilla extract, and coconut syrup. Whisk together well.
- Melt butter in a pan over medium heat. Once butter is melted, dip each roll in the french toast batter.
- Place rolls in hot pan and cook on each side until golden brown. Remove from pan.
- Top with toasted coconut butter & maple syrup and enjoy!
