Cold Sesame Noodle Salad

Ingredients
8 oz Soba noodles (1/2 package)
2 tbs Powdered peanut butter
1 Garlic clove, minced
2 tbs Rice wine vinegar
1 tbs Sesame oil
2 1/2 tbs Lime ponzu sauce
1/2 tsp Red pepper flakes
1/2 Medium red bell pepper, sliced thin
1/4 cup Frozen shelled edamame, thawed
2 tsp Toasted sesame seeds
Directions
1. Prepare noodles as label directs; drain and rinse under cold water.
2. In large bowl, whisk powdered peanut butter with 1 tablespoon water until smooth; whisk in garlic, vinegar, oil, ponzu sauce and red pepper flakes. Add bell pepper, edamame and noodles; toss to combine and sprinkle with sesame seeds. Makes about 3½ cups.
