Mediterranean Salmon Bowl with Couscous

Ingredients
1 cup Wholesome Pantry Basting Oil, plus more for sauteing
1 package Bowl & Basket Specialty Norwegian Salmon Filets, thawed and cut into 1 inch pieces
1 box Bowl & Basket Specialty Mediterranean Couscous
1 cucumber, sliced
1 pint cherry tomatoes, halved
Tzatziki sauce, if desired
feta cheese, if desired
Directions

1. Add cut salmon pieces to a bowl and pour basting oil over, ensuring all pieces are well coated. Let sit for 15 minutes.

 

2. While salmon is marinating, cook couscous according to package directions. Set aside.

 

3. Drain excess marinade from salmon and discard. Heat a few tsp of basting oil or olive oil in a large skillet over medium heat. Once hot, add salmon in an even layer, being sure not to overcrowd the pan. Cook the salmon in batches if necessary.

 

4. Cook for 2 minutes, then flip and cook for an additional 2 minutes or until golden and fully cooked. Repeat until all salmon is cooked.

 

5. Assemble bowls by first putting a layer of couscous, then topping with salmon and any desired accompaniments like sliced cherry tomatoes, sliced cucumbers, crumbled feta and tzatziki sauce.
