Chocolate Peanut Butter Gelt Cookies

Ingredients
½ cup unsalted butter, softened to room temperature
¾ cup Wholesome Pantry Peanut Butter
⅓ cup Wholesome Pantry cane sugar
⅓ cup Wholesome Pantry light brown sugar, packed
2 eggs
1 tsp Wholesome Pantry Vanilla extract
1 ½ cups Bowl & Baske all-purpose flour
1 tsp baking soda
½ tsp salt
2 dozen chocolate gelt cookies
Festive sprinkles, for rolling
Directions
- Preheat the oven to 350 and line two cookie sheets with parchment paper. Remove wrappers from chocolate gelt cookies, place sprinkles in a small bowl and set both aside until ready to use. Combine flour, baking powder and salt in a medium bowl and set aside.
- Beat butter and peanut butter in a large bowl until well blended. Add both sugars and beat until fluffy. Beat in eggs and vanilla until smooth, and then gently stir in flour mixture until dough comes together.
- Shape dough into 2-inch balls. Roll in sprinkles then place on the prepared cookie sheets, leaving two inches of space between each for spreading.
- Bake for 12 minutes or until lightly browned. Remove from the oven and then immediately press a chocolate coin into the center of each cookie; let set for 5 minutes before removing to a wire rack to cool completely
