Ingredients
2 eggs
1/4 cup heavy cream
1 cup leftover mashed potatoes
1 cup cheddar cheese, grated
Canola spray oil
Salt
Directions
  1. Preheat the oven to 400℉.
  2. In a bowl, add the eggs and heavy cream. Using a hand mixer, beat on medium speed for about a minute until the mixture thickens and becomes airy.
  3. Add the mashed potatoes and beat until combined.
  4. Add a generous pinch of salt and fold in half of the cheese into the mixture.
  5. You can line or not line the muffin tin. However, spray 8 muffin cups lightly with oil. Distribute the filling evenly across the 8 cups, filling each one almost to the top.Top each muffin with the remaining cheese.
  6. Bake for 17–19 minutes or until cooked through. Remove from the oven and serve immediately.
